Alexis is on the verge of deciding she's going to be vegan, which whatever. It's her body, she can put what she wants or doesn't want into it. The thing is that we're about 85% vegan anyway, but CHEESE. OMG CHEESE. I don't think *I* could live without cheese. I know Mila couldn't.

Still, I've been purposely making vegan-possible meals a couple of days per week so Alexis can flex those muscles. Mila can still toss in what she needs to be happy and I'm going to be over here swimming in cheese because obviously. The easiest way to make everyone happy is to dive into the "Bowl" trend which is nuts as far as trends go, but whatever. Being able to throw a bunch of stuff in a pile and call it a meal is pretty awesome. I'm in.

This BBQ Tofu Bowl is super easy to throw together and both girls were happy with it. I added cauliflower because Mila thinks she can just not eat vegetables lately but SHE IS WRONG. BBQ sauce messed up her ability to identify the offending veggie, so ... shhhhh. Don't tell her.

If you're not feeling the vegan/vegetarian thing, that's cool. Sub in chicken and knock yourself out. This would still be a solid dinner choice. It was super easy to throw together and hit all the right food categories.

BBQ Tofu Bowl (serves 4)

4 cups prepared quinoa
1/2 cup corn, cooked
1/4 cup blacks, drained and rinsed
2 cups cauliflower florets
2 tablespoons olive oil
1 package extra firm tofu, pressed and diced
1/2 cup BBQ sauce
1 avocado, diced
Cilantro
Shredded cheddar cheese

1. Layer the cooked quinoa, corn, and black beans into bowls.

2. Place the cauliflower in a microwave safe bowl and cover with a damp paper towel. Cook for 1 minute.

3. Heat the oil in a large skillet and add the tofu. Add the cauliflower and saute until lightly browned.

4. Pour in the BBQ sauce and heat for a few more minutes. Add more or less BBQ sauce, if you prefer.

5. Toss the BBQ tofu and cauliflower on top of the other stuff in the bowls. Top with diced avocado and cilantro, if desired. (My avocado was bad when I opened it. Alas.) Then top with shredded cheese, if you want.
