I doubt anyone has ever wondered how my brain works, but too bad because I'm going to tell you. I am easily districted by shiny things, so I can go from, "I should really use that pastry thing in the fridge" to this in no time.
"This" is a Banana Pecan Roll because logic.
"I should use that pastry thing" evolved to "I'll just throw some cinnamon and sugar on it" but then there were bananas. The bananas were starting to look a little shady, so they needed to be used. By the way, is it "to be used" or "need used?" I might have spent five minutes trying to decide how much I hate Pittsburghese after pondering that.
ANYWAY.
Bananas go better with caramel than they do cinnamon, so forget the cinnamon. I dug out the butter and brown sugar instead. And the vanilla! There has to be vanilla, of course.
And nuts.
Which nuts?
After much back and forth, pecans were the correct answer.
Not long after that slide down the slippery slope, magic was served. And it was goooood. But I hadn't measured anything, so I had to make magic again.
Absolutely nobody was disappointed when more magic appeared.
Banana Pecan Roll
1 tube/can Pillsbury Crescent Dough Sheet
1/2 cup butter, melted
1/2 cup brown sugar
1 teaspoon vanilla extract
1/4 cup chopped pecans
1 small banana, diced
1. Preheat the oven to 350 degrees.
2. Spray some nonstick spray on a cookie tray and then roll out the Crescent Dough Sheet and center it on the cookie tray.
3. Melt the butter. I do so in a glass measuring cup. It takes about 45 seconds in my microwave.
4. Stir in the vanilla extract and brown sugar then microwave for an addition 30 seconds. Stir. Taaaadaaaah! You have caramel!
5. Drizzle the caramel on top of the crescent sheet, saving a few tablespoons for later. Top with the pecans, again saving a few for later.
6. And then toss the banana pieces on top.
7. Start at one end and begin rolling the whole shebang up. You get bonus points if a toddler "helps" you.
8. When it's all rolled up, it will look like this.
9. Squish in the sides a bit to seal the seams then flatten the whole thing by pressing gently a bit.
10. It's later! Drizzle the reserved caramel over top of the whole thing and then sprinkle the remaining pecans on top.
11. Bake at 350 degrees for 17-20 minutes or until the top is golden brown.
12. Allow the Banana Pecan Roll to cool for 3-5 minutes before serving.
13. Shhhhh! Don't tell my family I made it again. I don't plan to share the results this time.
