In less than ten hours, I will embark on an adventure that involves working at a Very Grown-Up Job while trapped in my house with two kids. Like nearly everyone I know, I am dreeeeeeading it. The good news is that most of my co-workers are aware that I am not the boss of my house, so they will not be surprised when Mila joins conference call after conference call. She has many opinions, so I'm sure she's going to be great as the newest Associate Product Manager. I might teach her to just ask, "Why isn't this in scope?" so she can check at least four or five of the boxes on the job description.

It's going to be great. Or something. WE SHALL SEE.

In the meantime, I spent the weekend rushing around in preparation for bunkering down. I didn't have a chance last week to do anything, and we rarely eat at home this time of year, so I legit needed to get basics. I accomplished that mission and a few others, but that didn't leave me with much time. Alas, I'm reposting an old recipe. Based on the shelves at Target, yinz bought all the Ramen and frozen vegetables last week, so you are prepared!

I'm not. That stuff was all sold out by the time I got there.

Ramen Stir Fry

2 tablespoons peanut oil
1 package extra firm tofu (or whatever protein makes you happy)
3 packages Ramen (any kind)
1 bag frozen mixed vegetables (I like broccoli, carrots, baby corn, and snow peas)
1 tablespoon soy sauce
1 teaspoon Sriracha sauce

1. Toss the glorious little package of sodium that comes with the Ramen off to the side. You can use it for something else later or throw it away. I won't judge.

2. Cook the Ramen noodles. I go for the microwave method, but it doesn't really matter. Drain the water when they're done.

3. Press the extra liquid out of the tofu and then cut it into cubes.

4. Heat the oil in a large skillet over medium heat. Toss the tofu in there and fry it until it's lightly browned on all sides.

5. Throw the vegetables in there. Yes, I know they're frozen. It's OK. They will heat up as they get to know the tofu.

6. Once the vegetables are warm enough to make you happy, toss the soy sauce and Sriracha sauce in there. Add the Ramen noodles and stir everything up.

7. Pretend that was a lot of work, even if it wasn't.
