Zucchini Lasagna

This is very much so a "do as I say, not as I do" sort of recipe. I *know* to salt zucchini and let it sit before using it to bake, but sometimes I get impatient and don't do it. A real food blogger would have remade this Zucchini Lasagna so that the photos would be perfect, but I'm not real. I'm a figment of your imagination.

Or something.

It kind of doesn't matter that the photos don't do this recipe justice because lasagna doesn't photograph that well anyway. It ALWAYS tastes about 102352359 times better than it looks. ALWAYS.

This Zucchini Lasagna is no exception.

So, yes. It's watery in the photo. That's because I tried to cheat. Cheaters never win, though. Except that I did win because it was delicious. So there.

Zucchini Lasagna

1 pound of zucchini, sliced as thinly as you can manage (a mandolin works great)
1 jar good quality tomato sauce (Or you could make your own. Don't judge me and I won't judge you.)
2 cups fresh spinach
1 container (15 oz) ricotta cheese
2 cups shredded mozzarella cheese
1 large egg
1 teaspoon dried oregano

1. Preheat oven to 375 degrees.

2. Once your zucchini is sliced, lay it flat on a cookie tray. Sprinkle salt over top and allow it to sit for ten minutes. Then pat it dry with a paper towel. Now stick it in the oven for five minutes per side. Blot it dry again.

Failure to follow this step will result in runny lasagna. OR SO I'VE HEARD. Ahem.

3. Set aside 1 cup of the mozzarella.

4. In a medium bowl, combine the ricotta, remaining mozzarella, egg, and oregano. Stir them up to make a fun cheese filling.

5. In an oven-safe dish (I used a 9"x13" Pyrex), layer your stuffs. The order goes: zucchini, spinach (I just create a layer of leaves), sauce, cheese mix. Repeat that order until you run out of stuff. Top with the remaining 1 cup of mozzarella.

6. Cover with foil.

7. Bake at 375 for approximately 45 minutes, or until the zucchini is fairly soft. Then uncover the lasagna and bake it for another 15-20 minutes. You want the zucchini to be soft and the cheese to be golden brown.

8. All the lasagna to sit for 10-15 minutes before serving.

9. Enjoy an argument with your kid because lasagna has to have noodles in it to be lasagna, MOM.
