(Not) Chicken Tortilla Soup
I'm about to level up friends. I am re-posting a recipe that I posted over 5 years ago because Alexis is going to make it for dinner this week. She could find it in the archives, but if I'm going to make my kid earn her keep, I think it's only fair that I make that a little easier. So, here you go, Alexis!
We'll chalk this moment up to another advantage of this growing up nonsense. It's not all bad.
(Non vegetarians - this recipe is super easy to convert. Tyson has a bagged chicken strip that is basically the same as the Morningstar version listed below. Seek and destroy.)
(Not) Chicken Tortilla Soup
2 tablespoons olive oil
1 package Morningstar Meal Starters Chik'n Strips
1 can black beans
1 jar salsa
1/2 cup frozen corn
2 cups of broth
Tortilla chips
Shredded cheese
1. In a large pot, heat the olive oil and cook the chik'n strips according to the package instructions.
2. Toss the beans, salsa, corn, and broth in the pot and cook on medium high heat until the soup boils.
3. Scoop into bowls and garnish with cheese and a handful of crushed tortilla chips.
4. DONE! All told, this takes about ten minutes to make, which makes it pretty much the best.
