Strawberry Nesquik Brownies
While I haven't made cake using a box mix in ... a REALLY long time, I never quite let go of my boxed brownies habit. I tried a few times but always failed miserably at making them from scratch. They were always a little too cake-like or not quite chocolatey enough or just a general failure.
NOT ANYMORE.
I have Alexis to thank for this. She made fun of me for my boxed habit, so I set out to conquer a from-scratch recipe. But ... I couldn't let it be a chocolate thing. Instead I made strawberry brownies because I could. And because we all agreed it seemed like a good idea. And because I had Strawberry Nesquik that needed to be used.
(They work with Chocolate Nesquik, too. I have proven it.)
Strawberry Nesquik Brownies
1 1/2 cups melted butter (unsalted)
1 cup granulated sugar
2 tablespoons vegetable oil
2 eggs
1 teaspoon almond extract
1 1/3 cup sifted all-purpose flour
1 1/2 cups Strawberry Nesquik
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup white chocolate chips
1. Preheat the oven to 350 degrees.
2. Grease a 9" x 13" pan.
3. Pour the melted butter, vegetable oil, and sugar into a large mixing bowl. Stir. Add the eggs and almond extract and stir some more.
4. In a medium mixing bowl, whisk together the flour, Strawberry Nesquik, baking powder, and salt.
5. Stir the dry ingredients into the moist ingredients. You don't need an electric mixer for this. A fork or spatula works just fine.
6. Spread the strawberry brownie stuff in the pan and smooth out. Top with the white chocolate chips.
7. Bake at 350 degrees for 35-40 minutes or until a toothpick comes out clean.
8. They are surprisingly good warm, but even better after they've cooled.
