Totchos For Miles

Have you ever noticed that I tend to get obsessed with an ingredient and then ride that train until it breaks down? For example, there was The Month of Zucchini and there was The Month of Rhubarb.

Right now is The Month of Tater Tots.

I think it started with a Pirates game. I went to go buy French fries, but I ended up with Totchos because OF COURSE I DID. Now I'm stuck in a Totchos rut. It's a delicious, delicious rut.

Sure, they don't look like much, but you know very well looks can be deceiving. There is too much awesome happening with that pile of goodness right there for it to be anything other than amazing.

Totchos

1 bag tater tots
2 cups chili (I use this recipe)
1/2 cup nacho cheese sauce
2 cups shredded cheddar cheese
1 cup salsa
1/4 cup sour cream

1. Bake the tater tots according to the instructions on the bag and then throw them in a baking dish. Set the oven to 425 degrees while you move on to the rest of the fun.

2. Throw some chili on there.

3. Nacho cheese sauce. BAM.

4. Hello, my little friend, more cheese.

5. Bake this delicious mess at 425 degrees for 10-12 minutes, or until the cheese has melted. Then throw some salsa on top.

6. Finish it up with some sour cream.

Oh so super yummy looking! I don't like chili so I might replace that with just ground beef in taco seasoning.

We actually made (a version of) these the other night because it's a quick dinner when you realize you forgot to plan for dinner. YAY!
